Rasmalai Recipe in the simplest form..

As in our India People use to say that "Acche kam ki shuruat...kuch Meetha kha k karni chaiye". :) Keep this saying in my mind here I am going to write my first post for the Indian Bengali sweets i.e Rasmalai Recipe in one of the simplest and quickest form.




Total Time Taken:- 30 Min
Ingredients:-


  1. Milk
  2. Lemon
  3. Sugar
  4. Cardamom Powder
  5. Dry Fruits(Cashew-nut,Almond,Pista)
  6. Saffron(Kesar)


How to make Chenna:-


  • Put 1/2 kg Milk in a pan and make it boil.
  • Now add diluted lemon juice in it and stir until it make curdles completely(as shown in fig below).Add more lemon if needed.




  • Drain it in a muslin cloth and put it under running cold water,so that lemon taste has gone.
  • Squeeze the excess water and make a tight knot.
  • Now hang it on 45 min to 1 hr(shown in pic)



  • Add this chenna to a plate and knead it well approx 5-6 min,so that it became smooth n soft.You can also grind it in mixer.
  • Make 10-12 equal balls and flatten them in between your palm(just like shown in pic below).Set these ball aside.



Sugar Syrup:- 

  • Now put 3-4 cup water in a pan and bring it to boil with 1 cup sugar.Stir and add cardamom powder.
  • Add all balls in the syrup, put a lid on the pan and bring them boil for atleast 15 min.
  • Take off the balls from water and cool them.
  • Now squeeze them softly in between your palms to remove sugar syrup.Keep them aside.
How to make Rabri:-
  • Add 3 cup fat milk or full cream milk in a deep heavy bottom pan and boil.Add saffron and sugar when milk comes to boil.
  • Stir every 2-3 min and just move the layer of cream aside in pan.
  • Boil until the milk thickens and reduce it to the half of the quantity.Set this aside.
  • Keep this rabri in freeze for 2 hrs.

Platting:-

Put the chenna balls in a plate and add Rabri on top and garnish with grated dry fruits.
You can also chill it for few min and serve.
